Dos Arroyos Breakfast Tacos

Ingredients:

  • 8 small flour or corn tortillas
  • 6 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled breakfast sausage or bacon
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Dos Arroyos Red Salsa, for topping
  • Optional toppings: sliced avocado, sour cream, hot sauce

Instructions:

  1. Prepare the Fillings:

    • In a skillet over medium heat, cook the breakfast sausage or bacon until browned and cooked through. Remove from the skillet and set aside.
    • In the same skillet, add a little oil if needed, then add the diced onion and bell pepper. Sauté until softened, about 3-4 minutes. Remove from the skillet and set aside.
    • In a mixing bowl, beat the eggs. Season with salt and pepper to taste. Pour the beaten eggs into the skillet and scramble until cooked through. Remove from heat.
  2. Assemble the Tacos:

    • Warm the tortillas in a dry skillet or microwave until soft and pliable.
    • Divide the scrambled eggs evenly among the tortillas.
    • Top each taco with a portion of cooked breakfast sausage or bacon.
    • Sprinkle shredded cheese over the eggs and meat.
    • Add a spoonful of sautéed onions and bell peppers to each taco.
    • Garnish with chopped fresh cilantro.
  3. Serve:

    • Serve the breakfast tacos hot, with Dos Arroyos Red Salsa drizzled on top.
    • Optionally, serve with additional toppings such as sliced avocado, sour cream, or hot sauce on the side.
