Dos Arroyos Breakfast Tacos
Ingredients:
- 8 small flour or corn tortillas
- 6 large eggs
- 1/2 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled breakfast sausage or bacon
- 1/4 cup diced onion
- 1/4 cup diced bell pepper
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- Dos Arroyos Red Salsa, for topping
- Optional toppings: sliced avocado, sour cream, hot sauce
Instructions:

Prepare the Fillings:
- In a skillet over medium heat, cook the breakfast sausage or bacon until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add a little oil if needed, then add the diced onion and bell pepper. Sauté until softened, about 3-4 minutes. Remove from the skillet and set aside.
- In a mixing bowl, beat the eggs. Season with salt and pepper to taste. Pour the beaten eggs into the skillet and scramble until cooked through. Remove from heat.

Assemble the Tacos:
- Warm the tortillas in a dry skillet or microwave until soft and pliable.
- Divide the scrambled eggs evenly among the tortillas.
- Top each taco with a portion of cooked breakfast sausage or bacon.
- Sprinkle shredded cheese over the eggs and meat.
- Add a spoonful of sautéed onions and bell peppers to each taco.
- Garnish with chopped fresh cilantro.

- Serve the breakfast tacos hot, with Dos Arroyos Red Salsa drizzled on top.
- Optionally, serve with additional toppings such as sliced avocado, sour cream, or hot sauce on the side.
